Fresh Herb Cheese Spread

Be sure to use fresh herbs for this creamy cheese spread.

INGREDIENTS

1 1/2 lbs. cream cheese, softened
1 lb. butter, softened
2 teaspoons mashed garlic
1 1/2 tablespoons chopped sweet marjoram
1 1/2 tablespoons chopped chives
1 tablespoon chopped basil
1 tablespoon chopped Italian parsley

1 teaspoon chopped French thyme
1 teaspoon chopped oregano
1/2 teaspoon salt, or to taste
1 teaspoon freshly ground pepper

METHOD

Place cream cheese and butter in bowl of mixer. Beat the cheese and butter together until well combined. Add the mashed garlic to the cheese, mixing well. Add the finely chopped herbs, salt and pepper, and mix on low speed just until mixed.

Chill slightly and then form into logs or a flattened disk. Wrap tightly in plastic wrap. Refrigerate or freeze.

Serve with toasted sourdough or French bread rounds. This soft cheese is delicious as a spread on a vegetarian sandwich of cucumbers, microgreens, and tomatoes on a toothsome whole grain bread.
